Ingredients  

Cookies

  • ¾ cup butter - room temperature
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • cup brown sugar
  • ½ cup sugar
  • 2 ¼ cup flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tbsp espresso powder - for cookie dough

Cream Topping

  • 1 cup powdered sugar
  • 1 tsp espresso powder - for cream topping
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 7 oz Mascarpone cheese - room temperature
  • 3 tbsp cocoa powder - for topping

Instructions

  • Pre heat your oven to 350. In a large bowl add in your butter and sugars and cream together until light and pale colored.
    3/4 cup butter, 1/3 cup brown sugar, 1/2 cup sugar
  • Mix in your egg, egg yolk and vanilla extract until fully combined.
    1 egg, 1 egg yolk, 1 tsp vanilla extract
  • Add in your flour, salt, espresso powder and baking powder. Mix until just combined.
    2 1/4 cup flour, 1 tsp salt, 1 tbsp espresso powder, 1 tsp baking soda
  • Scoop your cookie dough into small 1.5 inch balls and place on a baking sheet and bake for 12 minutes.
  • Let the cookies cool on a wire rack and make your Mascarpone topping.
  • In the bowl of a mixer combine your heavy cream, espresso powder, powdered sugar and vanilla extract. Mix on high until it forms stiff peaks.
    1 cup powdered sugar, 1 tsp vanilla extract, 1 cup heavy cream, 1 tsp espresso powder
  • Fold in your room temperature Mascarpone cheese and then add to a piping bag and pipe onto of your cooled off cookies.
    7 oz Mascarpone cheese
  • Lastly top with some cocoa powder and enjoy!
    3 tbsp cocoa powder
