What I love about this recipe is how light and airy the cake was, and it had great moisture. Definitely not a dry cake. Also its easy to make and looks beautiful.
Citrus Almond Cake
Ingredients
Everything you need to make this yummy cake:
3 Eggs (Separate the egg yolks from the whites)
70 Grams of sugar
2 Tbsp of orange zest
250 ml of orange juice
80 ml of vegetable oil
250 Grams of almond flour
30 Grams of cornstarch
Directions
Preheat the oven to 325
Whisk together the Egg Yolks, Orange Zest & Sugar
Sift in your Almond Flour & Cornstarch
Add your Orange Juice & Vegetable Oil, Mix till no clumps
Whip your 3 Egg Whites into a meringue with medium peaks
Whisk the meringue into the batter until no clumps
Transfer batter to a cake mold and bake @ 325 for 25-30 minutes (until a toothpick comes out clean)
Let cool and top with powdered sugar and almond slices.
