This is a simple but super tasty pasta recipe that you should definitely add to your dinner rotation. It's unique and packed with flavor.
This pasta is super unique in my opinion and has the perfect level of spice. Not too hot but just right.
Spicy Italian Sausage Pasta
Ingredients
Everything You'll Need:
14oz of spicy Italian sausage (removed from the casing)
1lb of AL DENTE cooked Rigatoni or what ever pasta you prefer
2Tbsp of butter
4 cloves of garlic (minced up)
1/2 of a large yellow onion (diced)
2 large stalks of celery (minced up finely)
2 large carrots (minced up finely)
1Tsp dried oregano
1/2-1 Tbsp of red pepper flakes (1/2 for moderate spice 1 for more spice)
1 1/2Tsp salt
1/2Tsp fresh cracked pepper
1/2 cup of red wine
1 28oz can of San Marzano tomatoes
Freshly grated parmigiana to garnish (I use basil as well)
Directions
Just 8 steps away from your new favorite pasta!
In a large skillet add your butter, let it melt, then add your Garlic, Carrots, Onion, and Celery. Sauté this until soft (8-12 minutes).
Add the sausage to the skillet and break it up well using the end of your spatula. Once well broken up, add your Red Pepper Flakes, Salt, Oregano and Pepper.
Cook this while stirring every few minutes until the sausage is no longer pink and thoroughly cooked.
Add your wine and let it sizzle & then let it reduce for about 8 minutes.
Add your tomatoes to the skillet and let them simmer for 25-35 minutes - stirring every 5 minutes or so.
Cook your pasta to AL DENTE (don't overcook it should be slightly hard still - we will finish cooking it in the sauce).
After the sauce has simmered for 30 or so minutes add your pasta and let simmer for another 4-5 minutes until the pasta is cooked perfectly.
Serve and top with some fresh grated parmigiana and basil!
