Mint Chocolate Chip Cheese Cake Cups *NO BAKE*

​Ingredients

  • 12 Oreos (crushed up)

  • 1 cup heavy cream

  • 1/2 cup mini chocolate chips

  • 1/2 cup Andes Dinner Mints (roughly chopped)

  • 1 cup powdered sugar

  • 1/2 tsp peppermint extract

  • 4-6 drops of green food coloring

  • 8oz block of cream cheese

  • extra whip cream to garnish (if you want)

Directions

  1. Whip your heavy cream until you get stiff peaks. Then place in a bowl and put in the fridge until later.

  2. Add your block of cheesecake to your mixer with your powdered sugar and mint extract & green food coloring. Mix thoroughly until everything is combined and there is no streaks of green.

  3. Fold in the whipped cream that we made earlier in step 1, as well as your chocolate chips and andes dinner mints.

  4. Layer your cups with a layer alternating crushed Oreos and cheesecake filling, twice. Garnish the top with some whipped cream, crushed Oreos and an Andes dinner mint.

  5. Refrigerate for 1 hour before serving cold.
