Brown Sugar Banana Pancakes

Ingredients  

  • 2 medium sized Bananas - mashed
  • 1 ½ cup flour
  • 2 tbsp oil or melted butter - I use melted butter
  • 2 tsp baking powder
  • 1 large egg
  • 1 ½ tsp vanilla extract
  • cup brown sugar
  • ¾ cup milk - I use whole milk
  • pinch of salt

Instructions

  • In a large bowl whisk together your flour, baking powder and salt.
    1 1/2 cup flour, 2 tsp baking powder, pinch of salt
  • In a separate bowl, whisk together your mashed up bananas, brown sugar, milk, egg, vanilla extract and melted butter.
    2 medium sized Bananas, 2 tbsp oil or melted butter, 1 large egg, 1 1/2 tsp vanilla extract, 1/3 cup brown sugar, 3/4 cup milk
  • Combine your wet and dry ingredients and mix until just combined. (small lumps are okay!)
  • Pre heat a none stick pan over medium heat and spray with none stick spray OR add some butter to the pan. Place a 3/4 cup size scoop of your pancake batter on the pre heated pan and let cook for 2-3 minutes per side.
  • I serve these with some sliced bananas on top and some warm syrup! Enjoy!
