Mexican Breakfast Burritos

Ingredients  

For potatoes

  • 2 diced russet potatoes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • 2 tbsp olive oil

Burrito

  • 2 Tortillas - large burrito size
  • 6 oz chorizo
  • 6 eggs - large
  • ½ cup cheddar cheese

Instructions

  • Start by mixing together your potatoes, olive oil and all your spices and then place in an air fryer at 400°F for 18 minutes.
    2 diced russet potatoes, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika, 2 tbsp olive oil, 1 tsp salt
  • While they cook add your chorizo to a pan and break it up and cook it over medium high heat until it’s nice and crispy.
    6 oz chorizo
  • In a none stick pan soft scramble your eggs over medium low heat.
    6 eggs
  • Assemble your burrito of potatoes, chorizo, eggs and cheese and roll tightly and toast on both sides. Slice and enjoy!
    2 Tortillas, 1/2 cup cheddar cheese
