Start by taking your slices of bread and rolling them out with a rolling pin until they are nice and thin. Depending on which bread you choose to use you may have to remove the crust. I used brioche and white bread and didn't have to remove the crust.

Add a sausage link to your slice of flattened bread, and roll it up tightly and place it on a baking sheet seam side down. Repeat this with all your bread slices / sausage links.

In a medium sized bowl add in your milk, cinnamon, vanilla extract, eggs, and nutmeg, and mix well.
2 large eggs, 1/4 cup milk, 1 tsp cinnamon, 1 tsp vanilla extract, 1/4 tsp nutmeg
Dredge your roll ups in your French toast mixture and then place on a pan over medium heat and get them nice and toasty on all sides. (2-3 minutes per side).
Lastly remove these from the heat and dunk in some syrup and enjoy! I like to top these with powdered sugar sometimes too!
