Ingredients

For Boiling Eggs

  • 6 eggs large
  • 1 tbsp white vinegar
  • 1 tsp salt

Sandwich

  • 3 tbsp kewpie mayo
  • 1 tbsp heavy cream
  • ¼ tsp salt to taste
  • ¼ tsp pepper to taste
  • 4 slices Milk Bread or brioche
  • 1 tbsp butter soft spreadable

Instructions

  • Start by bringing a pot of water to a boil & adding your vinegar & salt. Boil your eggs for 10 minutes then transfer to a an ice bath.
    6 eggs, 1 tbsp white vinegar, 1 tsp salt
  • Peel your eggs and separate the cooked yolks from the cooked egg whites.
  • Roughly chop your egg whites into small pieces.
  • To your egg yolks add your Kewpie mayo, Heavy cream & salt and pepper and mix well.
    3 tbsp kewpie mayo, 1 tbsp heavy cream, 1/4 tsp salt, 1/4 tsp pepper
  • Combine your egg whites and egg yolk mixture and mix well.
  • To some sliced bread add some butter and your egg mixture. Remove the crust & enjoy! (removing the crust is optional - i like it more with it on)
    4 slices Milk Bread, 1 tbsp butter
