Ingredients

Special Sauce

  • 2 tbsp pickled jalapeños sliced
  • 2 tbsp pickled jalapeno juice
  • ¼ cup mayo
  • 1 ½ tsp garlic powder
  • 1 ½ tsp onion powder
  • ½ tsp paprika
  • ½ tsp cumin
  • ½ tsp salt

Quesadilla

  • 4 tortillas large
  • 2 chicken breasts large
  • 1 cup cheddar cheese
  • 1 cup Monterey Jack cheese

Instructions

  • Start by pre heating a pan over medium high heat and cooking your chicken breasts on both sides until it reaches 165℉ internal temp.

  • In a small bowl whisk together all the ingredients for your sauce.
    2 tbsp pickled jalapeños, 2 tbsp pickled jalapeno juice, 1/4 cup mayo, 1 1/2 tsp garlic powder, 1 1/2 tsp onion powder , 1/2 tsp paprika, 1/2 tsp cumin, 1/2 tsp salt
  • To a large tortilla add in some cheese, chicken and quesadilla sauce and fold it up. Toast it on a none stick pan over medium heat for 3 minutes on both sides.
    4 tortillas, 1 cup cheddar cheese, 1 cup Monterey Jack cheese
  • Remove your quesadilla from the heat and slice it into 4 pieces and enjoy! I love topping mine with sour cream!
