Ingredients  

  • 3 eggs - large
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • ½ cup sour cream
  • ¼ cup oil
  • ¼ cup melted butter
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • ½ cup flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 tsp baking powder
  • 1 cup sugar
  • 1 cup powdered sugar
  • 3 tbsp lemon juice

Instructions

  • Preheat oven to 350°F, and spray a 9×5 inch baking pan with some non stick spray.
  • In a large bowl cream together your eggs and sugar. Follow in with your oil, butter, lemon zest, lemon juice, vanilla extract, lemon extract and sour cream and mix till smooth.
    3 eggs, 1 tsp vanilla extract, 1 tsp lemon extract, 1/4 cup oil, 1/4 cup melted butter, 2 tbsp lemon juice, 1 tbsp lemon zest, 1 cup sugar, 1/2 cup sour cream
  • Add in your flour, baking powder, baking soda and salt. Mix this well until just combined, don’t over mix this, a few lumps is ok.
    1/2 cup flour, 1 tsp baking soda, 1 tsp baking powder, 1/4 tsp salt
  • Pour this batter into the baking pan and bake for 45-50 minutes at 350°F. Whilst that bakes mix together your powdered sugar and lemon juice to form an icing.
    1 cup powdered sugar, 3 tbsp lemon juice
  • Let your lemon loaf cool down and top with icing and enjoy!
