Pasta Alla Norcina
Ingredients
- 8 oz rigatoni pasta
- 1 cup heavy cream
- 1 lb Italian pork sausage
- Salt & Pepper to taste
- 4 cloves of minced garlic
- 1 small onion finely chopped
- ยฝ cup white wine
- ยผ pecorino Romano - plus more for topping
- 1 tbsp rosemary
- pinch of nutmeg
- 1 tsp red pepper flakes
Instructions
- Start by bringing a pot of water to a boil, salting it and cooking your pasta till al dente.
- In a large skillet add in your sausage, break it up with the end of a spatula and cook until crispy.
- Follow in with your onions, garlic, rosemary, red pepper flakes and nutmeg and continue to cook (3-5 minutes).
- To the skillet add your white wine and de glaze the pan. Use the end of a spatula to scrape off all the fond on the bottom of the pan before adding in your heavy cream and brining it to a simmer.
- Once the cream simmers add in your cheese, and pasta and mix well. Serve immediately!
