Bring a large pot of water to a boil, salt it and cook your pasta till al dente, reserve 1/4 cup of pasta water to thin the sauce as needed.
In a large skillet add a touch of olive oil and your pancetta and fry until crispy. Once it’s cooked add in your garlic and peas and fry for 1-2 minutes.
Follow in with your heavy cream and bring to a VERY light simmer. Once simmering mix in your cheese and cooked noodles.
let this cook in the skillet for 1-2 minutes over low heat and then serve!
