Chocolate Chip Pumpkin Spice Muffins
Ingredients
- 1 ½ cups pumpkin puree - pure
- 1 ⅔ cup flour
- ½ cup oil - neutral
- 2 eggs - large
- 1 ½ tsp cinnamon
- 1 ½ tsp pumpkin pie spice
- ¼ tsp ground ginger
- 1 tsp baking soda
- ¼ cup milk
- ½ cup white sugar
- ⅓ cup brown sugar
- 1 ½ cup chocolate chips

- Start by pre heating your oven to 425°F.
- In a large bowl mix together your pumpkin puree, eggs, brown sugar, white sugar and milk. Mix this until it’s nice and smooth.1 1/2 cups pumpkin puree, 2 eggs, 1/2 cup white sugar, 1/3 cup brown sugar, 1/4 cup milk
- In a separate bowl whisk together your flour, cinnamon, pumpkin pie spice, baking soda and ginger.1 2/3 cup flour, 1 1/2 tsp cinnamon, 1 1/2 tsp pumpkin pie spice, 1 tsp baking soda, 1/4 tsp ground ginger
- Combine your wet and dry ingredients and fold them into a batter. Once smooth fold in your chocolate chips and place in a greased muffin tray and bake at 425° for 5 minutes before dropping the temperature to 350 for an additional 17 minutes.1 1/2 cup chocolate chips
- Let cool in the muffin tray for 5 minutes before removing to a wire rack to chill.
